I recently started my Masters program in Food Business Management at The Culinary Institute of America. The past few weeks of my classes have ignited my desire to pursue cultural integration in food service. In the world of food service, especially within colleges and universities, there’s a growing recognition that food is more than just sustenance—it’s a reflection of cultural identity, history, and community. With student populations becoming increasingly diverse, understanding and integrating cultural backgrounds into menu planning is no longer a luxury but a necessity. Providing culturally relevant meals not only enriches the student experience but also fosters inclusivity and belonging on campus. By offering dishes that resonate with students’ heritage, we create an environment where they feel seen, respected, and valued. For food service providers, this means actively engaging with students, understanding their cultural preferences, and being adaptable. It’s about creating a dynamic menu that celebrates diversity, builds connections, and supports students in maintaining their personal and cultural identities while away from home. Let’s continue pushing for culturally integrated food service models that reflect the richness of our student communities. During a recent catering lesson, Nuneaton student Bethany achieved a significant milestone by successfully preparing coleslaw, guided by a recipe card. The seafood industry is a vital part of the Oregon Coast’s economy, but it faces a critical challenge: a lack of skilled workers. The Oregon Ocean Cluster Initiatives's High School Seafood Butchery Pilot Program is addressing this need by equipping high school students with the hands-on experience they need to excel in the Blue Economy. “The program has been carefully crafted with input from industry professionals and existing high school students…The Oregon Coast is in desperate need of workers skilled in seafood butchery. This training will support coastal youth in building these skills; encouraging a “coast-grown” workforce that can afford to remain local by having the know-how to thrive in this growing industry.” – Eddyville K-12 School The successful launch of the pilot is owed to the Economic Development Alliance of Lincoln County, who fully funded all six pilot programs. It also would not have been possible without early funding from the Builders Initiative, as well as contributions and equipment donations from Dexter Russel, Pacific Seafood, Uline, Englund Marine, NoCry, and Roby’s Newport. The program is now underway, but the work isn't done yet! After the initial pilot, we will launch an internship program to help students further develop their skills and get ready for a job in the industry. 🍻 Here's one that really made me sweat. Sometimes you think "it'll be easy, don't worry"... Well no: this one wasn't. At least not for me. I thought beer 🍺 was going to be easy... Until I immersed myself in this course. It's a world apart: full of exceptions and therefore rules. I'd never have thought that such a "little" study book would give me so much trouble. But phew! I've got my diploma. One thing's for sure, it wasn't my favourite, but I have to say that in the end I discovered a world that was completely unknown to me and that piqued my curiosity. In any case, I highly recommend this course. The bar is set high, but the course is great, the website is perfect, and the teachers always have an ear for the students. That level 2 is very intensive (I find it even more so than level 2 Spirits) both in terms of the information given and the learning system. Typical of the WSET school. Thank you again for the quality of the courses you offer. 📚 I am absolutely convinced by this course which is a must for anyone working in the beer industry, HoReCa and alcohol sales. But no offence or rancour, I won't be celebrating this diploma with a beer, but with a glass of champagne. I won't be easily changed. Chemistry, Careers, and Cooking: The Education Business Partnership Cornwall Council, funded by the Royal Society of Chemistry, aims to introduce young people to the diverse world of chemistry careers. Recently, pupils at Liskeard School & Community College enjoyed a culinary master class led by Mark Lewin from Cornwall Hospitality Collective and Truro and Penwith College alongside the manager of Tallend Bay Hotel, Jack. During the session, the pupils saw chemistry in action through a cooking demonstration by Mark Lewin and experienced first-class dining under the guidance of Jack. This immersive experience provided valuable insights into the hospitality industry, offering students a glimpse into potential future career opportunities.
