Paco Underhill describes a few techniques to ‘bend time’, and change the customers’ perceptions of a particular service encounter. The interesting thing is that the way you perceive time through your ‘internal clock’ may differ from real time. When people wait for a minute and a half, their sense of how much time has elapsed is fairly accurate. If waiting time is a bit longer than that, time distorts and they feel that the actual waiting time is much longer. Where restaurants get it wrong is at the end of the service. When the gesit asks for the bill. By the time this is requested the guest has decided to leave and waiting for the bill can trigger an unhappiness about the entire experience. In fact studies have proven that the moment of leaving in restaurants is 7 x more important than the moment of arrival. Double trouble... Can you believe it was just a week ago that I posted about spanakopita and now I have to talk about it again? Spanakopita gratin at OMA in Borough, swept up with glistening malawach. Totally different to Morchella, equally irresistible. Do good things come in twos? OMA is certainly an argument in favour of that notion. A first floor restaurant which has a sister restaurant, AGORA, downstairs, think casual vibe, industrial interiors, walk-ins only. An antidote to the formality and precision upstairs, a place that you can pop into for a quick bite. The split, Ground Floor / First Floor restaurants with different concepts is a staple in pubs, lively Ground Floor, matched with a more elegant First Floor dining room. The most well-known example in the London restaurant scene is Super Eight’s corner of Shoreditch, housing Brat above Smoking Goat. The upper floors, not accessible from the street (obviously), are destination restaurants, with rents typically reflecting this. So just as we predicted that operators will increasingly favour building hype online to drag people around the corner to a side-street, expect to see more operators trying to convince their customers that the only way is up. St Austell Brewery 𝘂𝗻𝘃𝗲𝗶𝗹𝘀 𝗺𝘂𝗹𝘁𝗶𝗺𝗶𝗹𝗹𝗶𝗼𝗻-𝗽𝗼𝘂𝗻𝗱 𝗽𝗿𝗼𝗷𝗲𝗰𝘁 𝗮𝘁 𝗦𝘁 𝗜𝘃𝗲𝘀 𝘃𝗲𝗻𝘂𝗲: 🍻 🎅 St Austell Brewery has announced a multimillion-pound investment for The Pedn Olva in St Ives, Cornwall. The pub with rooms will undergo a complete transformation, with its public areas, reception space, restaurant, pub and 26 bedrooms given an overhaul. The property will close in January before reopening in its new guise in early summer. A new, larger dining space will more than double the pub’s capacity. To the back of the hotel, overlooking the bay, long bifold doors will open onto a new terrace area, which will sit over 40 guests. On the west side of the building, a new rooftop terrace will feature decking and coastal planters. The transformation scheme also includes the reimagining of the site’s 26 bedrooms. Kevin Georgel, chief executive of St Austell Brewery, said: “This multimillion-pound transformation is designed to redefine the guest experience at one of our most iconic sites and create a space for the Pedn Olva where innovative design harnesses its unparalleled location. Our aspiration is to create a warm and welcoming pub atmosphere, year-round.” The Pedn Olva has been part of St Austell Brewery’s managed estate – which includes 46 pubs and hotels across the south west – for the past 25 years.
