What I have found useful since the experience with Covid - 19, is that all operations that is dependent on the food supply chain is that there must be an Option B, an alternative for basic supplies. As well effective communication between Food and Beverage departments can pre-empt and correct temporary shortages and increased prices for supplies and implementing alternative menu options based on available supplies from local retail suppliers thus minimizing increased food cost.
