These collaborations span key areas, from sourcing fresh, locally grown ingredients through local farms such as Silal and Manbat, to adopting biodegradable solutions with Palmade Biodegradable Products, managing surplus food and waste with Dubai Municipality UAE Food Bank and The Waste Lab, and supporting recycling initiatives through Nestlé Nespresso SA programs. By integrating these practices into daily operations, Hospitality by DWTC continues to reduce the environmental footprint. Every dish tells a story, and every young chef starts by learning the language of flavor. The Internship Programme at #HospitalitybyDWTC has been in place for several years, welcoming young chefs from around the world to join an intensive, hands-on experience at our award winning catering division. Overseen by Chef Georg Hessler, Director of Culinary Operations, and led by Executive Chef, Tarek Mouriess, the programme gives young talent the opportunity to explore the culinary arts, from sourcing ingredients and produce, to dishing up the final plate. Georg Hessler, Director of Culinary Operations, and Tarek Mouriess, Executive Chef, provide young talent with invaluable experience in the kitchen, teaching an array of techniques, cuisines and courses, as well as preparing them for the professional environment. Earlier this month, a team of 500 culinary experts from #HospitalitybyDWTC provided exceptional service and catering for the 44th edition of GITEX GLOBAL Largest Tech & Startup Show in the World. Eric Menard, Executive Chef, Venue Operations - Production Kitchen, at Dubai World Trade Centre, talked us through the planning and preparation that goes into catering to a large scale, multi-venue event. From menu planning and ingredient sourcing, to preparing and serving a range of dishes to cater to different cuisines and dietary needs, the team ensure attention to detail and consideration to deliver an excellent experience for guests and exhibitors.
