THE DIFFERENCE - OUR WHY How many times have you taken a cake out of a supermarket packet; excited for the buttery, sweet mixture of flavours only to be left underwhelmed and forgetting you ate it a few minutes later? That was the pain we had, and the passion that pushed us to bring traditional recipes with a modern twist to Gilmartin's; our bakery in Stewarton. Our head baker, Lynn, is tasked with making cakes WITHOUT the multiples of additives and cheap thickeners used by supermarkets to maximise profits. It's why we never use margarine in our non-vegan bakes - and all our butter is organic, made from Mossgiel cream in house. The flour is organic too, and the recipes ban the gums and 'shelf-stable' additives so common in baking today - pushing profits up, and flavours out. At G's, we don't follow the fashion to cut costs for cheap bakes and cakes - we do what we have to, to realise our vision of sustainable and local food that just happens to taste great! #Baking #Organic #Local #BakedInHouse #Gilmartins

I've noticed that in recent years, bakery items such as croissants and brioches, which used to be smaller and could be eaten in a few bites, have become significantly larger. Similarly, cake slices that were once modestly sized now often resemble entire cakes. Why has there been a trend toward producing larger bakery items? Wouldn't it be more sustainable to offer smaller portions at the same price, potentially reducing food waste and ensuring customers can enjoy their treats without feeling overwhelmed?
