Upcycling is having its moment⌛Converting side streams into new ingredients for the food industry reduces waste and enhances product sustainability. Jussi Loponen, Vice President of Fazer Group research and innovation unit called Fazer Lab, took part in an online panel discussion of industry experts about upcycled ingredients, focusing on how innovators could maintain a consistent supply of raw materials and the challenges of launching new products. Fazer Lab team explores new sustainable and healthy food solutions for the future. However, one of the fundamental questions is whether consumers want – and understand – upcycled food? As a consumer-centric company Fazer has tested the market with limited-edition confectionery, Taste the Future Oat choco toffee hearts, which was made with two upcycled components: okara, a side stream of oat drink production, and the other from our own confectionery production, from broken or underweight Karl Fazer oat choco tablets. Consumers were informed to the product’s upcycled content via an upcycled label on-pack.🤎 “Consumers confuse upcycling with recycling and find it ambiguous without explanation. Terms like 'upcycled' and 'side streams' are largely unfamiliar. Many consumers view upcycling as a positive and innovative concept, trusting that food companies are already minimising and reusing food waste. Nonetheless, much communication is required to enhance awareness and understanding of upcycling", says Jussi Loponen. A recent study by Red Note revealed that consumer awareness of upcycling is low. While sustainability holds at least some importance for many consumers, those who are particularly focused on sustainability represent a smaller segment, with 14% in Finland and 21% in Sweden.
