What if we started including nutrition as part of discharge education, encouraging registered dietitians to visit with patients prior to discharge? It's great to see case study results from New York's public hospital system making plant-based the default meal — 50% of eligible patients now choosing plant-based (up from 1%!), 36% decrease in food-related emissions, cost savings of around 59 cents per meal, and (ready for this one?) 95% patient satisfaction rate! Amazing. I remember working as a clinical dietitian trying to educate patients after they had heart surgery. At the same time they were getting served bacon on their hospital tray, I would be recommending that they avoid bacon due to the saturated and salt. What a confusing message for the patient. Making plant-based meals the default option in hospitals makes sense! It's better for both human health and the health of the planet. Great to know that it can also decrease costs while making patients happy. #plantbased #sustainability #healthcare

👏Incredible news👏In 2022, all 11 hospitals in New York made plant-based meals the default - the results are incredible: 🍎1.2 million plant-based meals have now been served 🍎This cut carbon emissions by 36% 🍎Cost savings were 59 cents per meal 🍎Satisfaction rate over 90%. If patients want to choose meat, they can - but most opt for the plant-based default. An inspiring model that should be copied by other hospitals (and schools) the world over. How do they do it? "All meals are made from scratch at the health system’s Culinary Center in Brooklyn. The culinary team includes Food Service Associates at each hospital who take the patient’s food order, educate them about the flavor and nutrition of the day’s plant-based options, and gather patient feedback about the meal. New recipes are piloted as a “Chef’s Recommendation” and only enter the menu rotation if they achieve an 80% patient satisfaction rate or above. Say it with me… plant-based meals are the future. Don’t believe me? New York City hospitals recently made plant-based meals the default dining option for patients. Here’s what happened: → They started with Meatless Monday in 2019, then plant-based lunches and dinners in 2022. → The staff carefully selected familiar dishes and avoided words like vegan or vegetarian, but opted for catchy meal titles. The results? → Over 50% of the patients chose plant-based meals, with 95% satisfaction. → Patients can still opt for meat. Nobody is forced to eat anything → The biggest public healthcare system in the US is setting an example for others to follow. Win for health. Win for the environment. Win for the future. The NYC hospitals are just the beginning.

Another successful year for our Food & Nutrition Team! Proud to announce that for the second consecutive year, we have received zero citations during our annual survey. Despite initial doubts and skepticism, we have proven that excellence is achievable. When I first joined as a CDM in skilled nursing, I encountered skepticism with phrases like "there is always a citation in the kitchen" and "hope they find something small or they will just keep looking for something big." However, we refused to settle for mediocrity. Quoting Francis of Assisi, "Start by doing what's necessary; then do what's possible; and suddenly you are doing the impossible." We have exemplified this spirit by going above and beyond to ensure exceptional standards in our operations. Kudos to the entire team for their dedication and commitment to excellence.
