It’s not all about work. Sometimes, it’s about enjoying good company, sharing laughs, and just being ourselves. I truly believe in the joy of working with people you can trust and have fun with. It’s incredibly important to take some time to just be silly and enjoy ourselves. These moments of lightheartedness and genuine connection keep our spirits high and strengthen our bonds. So, when there are inevitable challenges, we can pull together seamlessly and overcome whatever we face. This is especially the case with Chef Christophe Megel, who never fails to find the humour in things. Discipline vs. motivation… …I’ve been reflecting on this a lot lately, and last week’s awarded Michelin ⭐️s crystallized it for me. Long ago (ok, only since 2️⃣0️⃣2️⃣0️⃣), I recognized that I couldn’t rely solely on motivation. We all have those days that feel sluggish. Instead, I’ve focused on being disciplined enough to show up consistently. Motivation alone won’t earn a fine dining restaurant a Michelin ⭐️. In a team setting, everyone must be disciplined enough to show up and stay consistent, regardless of what’s happening in their personal lives—which can be incredibly challenging when leading a team of people. The pressure to maintain that ⭐️ year after year must be immense. Heck, even a two-peat or three-peat championship in sports is rare. ⚽️ My 🔑 takeaway is that you can show up, even when not motivated, and still get sh*t done.

This is a perfect example of how hospitality should not work. Answering YES to the customers all the time. Ensure all team members are aligned with the restaurant's goals and understand how their actions contribute to these goals. Use a common language, such as "we" for successes and "me" for failures, to emphasize teamwork and shared responsibility.

Distraction will derail even the most gifted team. I'm a pretty good baker. During my early expat days, job opportunities and friends were few. I dove headlong into a Great British Bakeoff binge and mastered delicacies from homemade sprinkles to choux pastry. Despite those culinary feats, I managed to absolutely roast muffins this weekend. Why? Distraction. A team that doesn't have a clear image of what needs to get done, when it needs to be accomplished, and why cannot perform. Daily distractions and competing priorities will derail their efforts. Focus -- at the macro level, is essential to keep everyone rowing in the same direction. This helps each team member prioritize tasks. When everyone knows with clarity what they need to do each day, you can make real progress. What has been a time distraction derailed you?

This first half of 2024 marks 10 years since I took on a management position at Pura Ração Lda. What seemed like an impossible task to accomplish with high performance standards, nowadays seems less impossible. Between victories and defeats, it is the failures that i find difficult to overcome, overshadowing the brilliance of the victories, which fortunately were overwhelming in number. May the next 10 years be filled with the brilliance of victories, and may they be shared with the entire team! They were and will always be the result of all of us, team, customers and suppliers. In a market where the biggest companies are getting bigger and bigger, leading a company whose nature continues to be familiar will certainly continue to be challenging.

As a Restaurant Manager, it's essential to step back from direct involvement and position yourself in a corner where you can fully observe the floor. This allows you to monitor the allocation of each team member, track the movements of section holders, runners, and the entire staff. By reading the floor and understanding the overall mechanism, you can effectively lead your team. Much like a football coach who needs to stay off the field to see the entire game, stepping back enables you to make better decisions and ultimately avoid losing the match.

When we find the culinary team uninspired and lacks of direction- - An inspired and motivated team makes the remarkable differences in a successful operation. A motivated team drives for the success of the operation. - Daily team briefing plays a crucial role in discussing the potential and competencies of each of the colleagues, quantum of the sales figures and the minor loopholes which can be improved. - Delegating tasks, practicing autonomy to feel them heard and valued which can further help them to take higher roles and responsibilities. - Assigning them new tasks and challenges making new recipes, a creative approach to the Guests, solving problems will always keep them inspired. - Rewards and recognition to acknowledge their hard work and effort in terms of monetary or non monetary or could be a promotion based on their performance will keep the team positively motivated.
