In my experience, guests want to be entertained, not lectured, so keep it light hearted and jovial. Make sure that all the equipment works, if you use induction, make sure you have induction pans! Check, and double check your preparation, have extra amounts. Practice beforehand to make sure that it's not too long or too short. Be amusing, but not crude, don't be personal. Engage the audience. If you have guests doing multiple cruises, make sure that you don't repeat the same Culinary demonstration. Be professional Work with the Maitre D with the show, introduce some crew members such as the Pastry Chef, Baker, I used to introduce the Chief Steward as well and give the guests some facts and figures of how much the ship uses in a cruise.

Mise should be perfect, Things which needed to be blanched should be blanched, Things which should be marinated should be marinated, Proper utensils and equipment, and At last the one who is handling or operating should be well trained with all proper SOP's. Truly food is not only about speed but to make it easier to handle even by well trained they have to love the food first then only quality will come and speed will slowly catch up. Food is not a rush thing.

Speed is important but has got tobe interactive and recognizing the culinary team frequently and the front of the house team. Thanking guests for being part of the experience is very important as we create memories and events like culinary shows are always remembered for the fun atmosphere and the delightful preparation of the dishes . The executive chef certainly plays an instrumental part along with the Maitre'd and his team.
