I'd look at venues that can work with you. Some places are less accommodating than others. I'd survey the attendees and ask about their dietary restrictions. Once I have those, I'll work with the venue to craft a menu. I'd send that menu to the guests who RVSP'd and have them select their meal (I'd have the ingredients clearly listed on that menu) and give them the option to make one last modification or ask a question. This way, they know what they've signed up for, the venue is prepared, and the guests feel like they are part of the experience.

Clearly ask guest about their needs in advance through the RSVP process, communicate these needs to the caterer, offer a variety of options on the menu to cater to different restrictions, and clearly label all dishes with ingredients to avoid cross-contamination; this includes providing allergen information and ensuring staff are knowledgeable about dietary concerns.

If we are planning a large event with diverse diets i will say it’s like making sure every guest gets a seat at the table. The key to a great event is making everyone feel like a VIP. We should offer a range of options vegan, gluten-free , nut-free and label them clearly. I saw an Oscar behind the curtain video on you tube some years back i saw they ensure everyone’s needs are met, from allergy-friendly meals to culturally specific dishes ....
