The best way I can describe a what "Foley" is, suppose we have a case of an animated video of a fire burning in a camp and the current situation doesn't allow for setting the whole office on fire, so a good way to tackle this issue is to stand 0.5-1 meters away from a condenser microphone and put my hand vertically in the middle of my mouth while blowing air and recording the outcome, it produces the sort of rumbling you'd expect from a fire in a camp, Foley is the process of creatively solving a problem using objects around you, it was the most fun process of my experience.

"editing" recorded foley effects is a process of its own, it's not only a matter of cutting silences and finding the good takes and isolating them, it's also a process of simulating the space they're in using Convolution Reverbs, simulating the process of them getting nearer or further using various volume changes, even some tricks like frequency shifting after a reverb effect produces the anime-sounding effects goes a long way, what makes Foley editing special is unlike Voice Over editing, it is part of the production and the design of the sound itself!
