The vegan boom in New York City is undeniable right now. New openings include a Cuban-influenced cafe and market in Clinton Hill, as well as a vegetable-focused Chinese restaurant on LES. There are many reasons for the latter change, including environmental, moral, and health concerns, but many cultures have practiced veganism for centuries and many people maintained a plant-based diet long before it was considered. as fashionable.
