The humble pea. Whether they are Snap Peas, Snow Peas or Petit Pois, these little, typically green, gems are quite versatile. Most folks only think of peas as the vegetable you boil, steam or mush to eat with fish and chips, but within the beverage space, the humble pea has been making flavour waves for quite a while. From being the sustainable starting point of craft spirits to being an integral part of creating rich and complex non-alcoholic bases in the fast-growing no/low space, the pea is holding its own in this innovative space. Unlike most vegetables, incorporating peas is far less intense. The subtle sweetness and earthy notes make the pea the ideal flavour note to incorporate into RTD cocktails aiming to subtly inject a more adult sweetness into their drink. Our in-house applications expert, Lauren, has created a simple cocktail blend using our award-winning Pea KiiNote® that you can try for yourself: Peas on the Beach is made using our Pea KiiNote®; Rose Water (Bulgarian) KiiNote®; and Vanilla (Madagascan) KiiNote®. For a kitchen cupboard version: In a shaker, take 50ml of vanilla vodka (or a non-alcoholic alternative), 50ml of lime juice, 25ml of simple syrup (or to taste), 25 ml of pea juice. Shake well and pour over crushed ice. For a final flourish add sweet pea flowers to garnish. Not only do peas provide a complex earthy vibe to your application – it forms the perfect hero ingredient for sustainability-conscious brands. The modest pea, with its nitrogen-fixing properties, reduces the need for energy-intensive fertilizers whilst providing added nitrogen for other crops. Our peas are picked less than 2 miles from the distillery where the farmer personally delivers them by tractor. The fresh peas are gently infused in water and ethanol before being distilled by the Master Distiller, resulting in our perfectly pure and natural Pea KiiNote®. BRING ON THE BOTANICALS A botanical is defined as a substance used either as a food or a medicine derived from plants, fungi, algae or lichens*. But for many, the immediate visual the word botanical conjures up tends to be herbal or floral, a common inclusion in culinary and non-alcoholic beverage applications such as herbal teas. But with the increased drive for the depiction of natural, supported by provenance in our food and drink space, 2024 will see the rise of the use of botanicals across more categories. This is a great development for the simple fact that botanicals can boost certain characteristics and the overall flavour impact – making food and drink that much tastier! The use of botanicals will allow brands to tap into the adventurous spirit a lot of consumers are seeking without compromising on taste. For example, cardamom contains a range of aromatic compounds which allows it to pair well with lots of fruits, especially some of the more floral fruits such as mango, as the aromatic compounds work in harmony together creating a sweet and spicy blend. That said, botanicals can also take on the more practical role of being a ‘balancer’. Some botanicals, being naturally bitter, are used to provide equilibrium in some cocktails and beverages where the bitterness can counter the sweetness. For example, naturally bitter herbal extracts such as Gentian and Wormwood are used in liqueurs such as Campari and Vermouth, respectively, which can have a high sugar content. Their use delivers a balanced and pleasant flavour experience. Think of this when next you enjoy your Negroni! Not only can botanicals work synergistically with other flavours but they are also beneficial for their functional properties. This could range from increasing the bioavailability of a functional ingredient (such as a vitamin, mineral, antioxidant etc) to enhancing preservative qualities which can improve shelf life. We wouldn’t be Omega without giving you a chance to create a unique blend of your own and our Chef Greig has shared his special botanical blend seasoning, the perfect single seasoning blend for any roast – meat or vegetable-based. Coffee, a key component of this blend has a natural affinity with meat. There are aromatic molecules present in coffee that are also found in grilled meat. So, using ground coffee in a dry rub will enhance the richness and intensity of the meat flavour. Enjoy! Greig’s Mexican Coffee Rub (available as a liquid blend with our KiiNotes®) Ingredients: 4.5g of Habanero Chilli powder. 45g Ground coffee beans. 85g Dark brown sugar. 5g Smoked paprika. 4g Mexican oregano. 5g Coriander seeds. 75g Salt. Blend to create a go-to roast dish seasoning. Sprinkle on your produce before placing it in your oven. Dry January continues to build popularity each year in the UK. For those who haven’t heard the phrase (where have you been?) Dry January or Dryuary encourages individuals to abstain from alcohol for the entire month of January. This initiative aims to raise awareness about the health benefits of reducing alcohol consumption and encouraging a healthier start to the year. To keep your Dry January going, our in-house Applications Technologist Lauren has created a refreshing no-alcohol cocktail - her Fiery Peach Fizz, made with all-natural flavours and our provenance-based kiiNotes®. Ingredients: Peach Juice Concentrate (65 Brix) - 18g Lemon Juice Concentrate (32 Brix) - 1.5g Natural White Peach Flavour - 0.45g Earl Grey Tea kiiNote® - 1.5g Ginger (Sri Lankan) kiiNote® 0.25g OmegaSweet Extra Flavour Natural - 30g Sparkling Water No-Alcohol Spirit alternative (optional) Process In a shaker, mix the Peach juice concentrate, Lemon juice concentrate Earl Grey Tea kiiNote®; Natural White Peach Flavour; OmegaSweet® and Ginger (Sri Lankan) Natural kiiNotes®. Shake well and pour over ice in a large wine glass. Top up with sparkling water/no-low alcohol alternative. One of our favourite no-alcohol alternatives for this recipe is CleanCo’s Clean G. Without alcohol, consumers typically switch over to sweetened non-alcohol substitutes. The reason for this is the inability to replicate the alcohol sensation that is typically found in ABV beverages. Trends indicate consumers who take up non-alcoholic beverages are keen to ensure that the products deliver on the reduced sugar, natural and clean label credentials plus provide some added functional benefits. On top of these, they are also looking for products that provide a similar palette delivery to alcohol whilst staying low-calorie - all the while eliminating the drawbacks of alcohol. To keep the taste and calorific profiles in place and enhance flavours effectively, the right natural solution would be needed. Omega Ingredients OmegaSweet® provides the right balance.
