The GAIL’s story began in 2005, when the first bakery opened in Hampstead to make world-class artisan bread more widely available beyond London’s top restaurants. The founders’ aim was, and remains, to reinvent the way Londoners think about bread – fresh and handmade – and their neighbourhood bakery – local and beautiful.

    Today, we started up the ovens in London Bridge station. Our friends Object Space Place were inspired by architect Leslie Green, who created the Underground’s distinctive colour palette. In tribute, we’ve used glazed green bricks, warm copper cladding and ash timber arches. Any bakes left at the end of the day will be shared with St Mungos NSNO Central Hub.     Last week we celebrated a decade of baking in Blackheath Village. Over those ten years we’ve got to know our community there rather well, as Bakery Manager Katerina Spokova explains: ‘We have amazing regulars - we know their families, their kids, their dogs. They’ve become friends who sometimes pop in just for a chat. We’ve partnered with the local schools, music festival and and churches for events and raffles. I love the bakery’s warm atmosphere - having regulars who come and give you a hug, their kids calling me “auntie” and their dogs recognising my voice and waiting for their treat. The personal touch makes such a difference in our daily lives.'

    St Pancras is our very first bakery within a train station. Whether it’s a box of buns to take home to Mum and Dad, or an expertly-brewed espresso when you arrive into the city, having something delicious to eat and drink should always be part of the journey. Our friends at Made In Place - Interior Design | Architecture imagined the space as a combination of bakery and lounge, with a visible kitchen and plenty of space to plug in a laptop. The principal material is sustainable West African Sapele wood, while the baker’s table is made with marble reused from our Abbeville Road bakery. Any bakes left at the end of the day will be shared with Euston Foodbank and Coram’s Fields Youth Club. Find us close to the Thameslink platforms.

    Caroling, caroling. We've welcomed around 170 schoolchildren to a handful of bakeries to bring some Christmas cheer. As a thank you for their beautiful singing, we treated them to warming hot chocolate and a cinnamon bun. Each school also collected funds for a charity of their choice. We'll have more festive performances at: - Lewes, 11th Dec at 11am - Ruislip, 13th Dec at 11am - Newbury, 17th Dec at 11am - Wilmslow, 18th Dec at 11am

    For the first time, we’re delivering festive joy across the country with our Christmas boxes. No mean feat, when the contents are freshly baked each day. So we’re pleased as punch that our new Long Weekend boxes have been included in The Independent’s luxury Christmas gift guide: 'The selection has you covered for everything from festive hosting (see the Lincolnshire poacher cheese biscuits and green tomato chutney) to lazy mornings in bed […] the pièce de résistance, though, is the ginger and treacle loaf cake, which is perfect for impressing Christmas guests.’ https://lnkd.in/gzs5EwQ7

    Our newest bakery opened today in Chelmsford. Inspired by its history as the birthplace of radio, our friends Newman Gauge Design Associates have woven elements of the Marconi factory into the interior. The pendant lights and bread shelving nod to industrial design, while the baker’s table matches the work desks once used in the factory. With sustainability in mind, we’ve used FSC timber for all of the joinery, and Graphenstone Paints UK air-purifying paints. The flooring in the kitchen area comes from Tarkett, made from 35% recycled content and is adhesive-free, making it easy to recycle at the end of its life. Any bakes leftover at the end of each day will be shared with the residents of Anne Knight House, a supported living facility which helps vulnerable young families. Unit 3, 1 New London Road CM2 0NA
