    🌟 Exciting Partnership Announcement! 🌟 As 2024 comes to a close, we are thrilled to announce our partnership with Lesaffre Bulgaria! Today, we signed a Memorandum of Understanding to support the economic inclusion of forcibly displaced and stateless people in Bulgaria. Together, we aim to provide high-quality, certified training opportunities in Lesaffre Baking Academy and pave the way for meaningful employment in the local labor market. We’re looking forward to 2025 and the opportunities it will bring as we continue working with Lesaffre to create brighter futures for forcibly displaced communities. 💙 --- 🌟 Вълнуващо ново партньорство! 🌟 Приближавайки края на 2024 г. сме развълнувани да обявим партньорството си с Лесафр България! Днес подписахме Меморандум за разбирателство с цел подкрепа за икономическото включване на принудително разселените лица и лицата без гражданство в България.   • Have you ever heard of the expression “you are what you eat”? 🥗 A new research study focuses on understanding the relationship between gut bacteria and how we feel, especially depressive episodes. Indeed, the gut microbiome, the collective genome of trillions of bacteria that live in the intestinal tract that are created largely by what we eat and drink, appears to influence our mood and mindset. This research shows that one bacteria named Eggerthella is found to be consistently abundant in the guts of depressed individuals. 🧑🔬  This is where your diet comes in and improving it could have wonderful benefits on your gut and how you feel!   • [#DidYouKnow?] The history of yeast goes back years ago, with the Egyptians who used yeast to make their bread, believing it to be a miracle ✨ New research suggests the use of organisms for #fermentation could have come from Ancient Egypt in 1300–1500 BCE. Otherwise, yeast’s use in beer brewing 🍺and winemaking 🍷has been observed in Sumeria, Babylonia, and present-day Georgia as far back as around 6000 BCE.  However, the word “yeast” as we know it today was not associated with fermentation until 1859. Before this the word was largely associated with where yeast could be found, meaning dregs or dirt, jest, or foam. With Louis Pasteur, the history of yeast took a decisive turn in 1857👨🔬. He discovered the fermentation process and established the key role of #yeast as the #microorganism responsible for alcoholic fermentation and for forming #bread ’s aromas and flavors. Baker’s yeast, Saccharomyces cerevisiae, has imposed itself, throughout history and worldwide, as the best way to make the dough rise 🍞. It is no wonder that yeast has played such a fundamental role in human society since ancient times. We know we may have a lot more in common with yeast than we could have ever imagined. And just like humans’ yeast’s potential continues to grow and will continue to benefit humankind, hopefully for the next 5️⃣,0️⃣0️⃣0️⃣ years to come.   • Syn-bio: A key technology to build the future of #fermentation processes 🦠 Synthetic biology firms had begun modifying yeast, expanding the number of molecules obtainable through yeast fermentation. Syn-bio applications are likely to disrupt industries that accounted for as much as a third of global output in 2022, according to @Boston Consulting Group (BCG) ’s recent studies. To stay at the forefront of #innovation, at @Lesaffre, we decided to partner with @Recombia Biosciences to accelerate the development of yeasts to produce fermented ingredients. As science continues to develop and the industry dynamics keep changing, companies have to embark on co-development strategies, which help them make the right technology choices, choose the right partners and use the right collaboration models.   • Fermentation comes with many advantages that can assist the transition to a healthier and more #sustainable diet.  Consumers increasingly swear by the authenticity of sourdough bread 🍞, farmhouse cheeses 🧀 and craft beers 🍺. They are rediscovering the #benefits of tofu, sauerkraut and kimchi, and some even produce their own kombuchas and kefirs. Fermented products are known for their health benefits and are taking over the grocery store shelves. And the #trend shows no signs of abating 💪 This is why, in December 2022, @INRAE and @ANIA launched the “Ferments of the Future” Grand Challenge, of which Lesaffre is a #partner.  But what is the aim of this initiative? Bringing together 30 leading names from the #food and #research industry, this research and innovation program aims to remove the scientific and technological barriers that slow down #innovation in the field of food ferments 🔬 "We are pooling our expertise and infrastructures to forge a better understanding of the fermentation mechanisms and then develop new fermented products, based on cereals, legumes, fruits, and vegetables." says @Mickaël Boyer, Head of Discovery & Front End Innovation.
