Christmas Chicken Recipe We’re starting our Christmas recipe series with a healthy Christmas chicken dish. Simple to make, full of flavor, and perfect for keeping your meals light and nourishing this festive season. More wholesome recipes to keep you feeling great throughout the holidays are on the way. Christmas chicken 1 whole organic chicken (approximately 800g) 1 large yellow onion 1 medium carrot 6–7 pitted prunes 1 cinnamon stick 4 garlic cloves 2 tsp pink Himalayan salt 2 tsp black pepper 2 sprigs of rosemary Method 1. Rinse, peel, and cut the carrot into 0.5 cm cubes. 2. Rinse, peel, and cut the onion into 0.5 cm cubes. 3. Peel the garlic. 4. Transfer the cleaned chicken to the tajine. Add the onion, carrot, and garlic on top, spreading them evenly to cover the chicken and space around. 5. Add the pitted prunes, distributing them evenly around the chicken. 6. Place the cinnamon stick inside the chicken. 7. Season with salt and pepper, ensuring an even coating on the chicken and vegetables. 8. Cover the tajine and place it in a cold oven. Set up temperature to 210°C oven. Leave it to cook for 80 minutes. 9. Carefully open the cover, place the rosemary and close the cover back. Leave in the oven for 5-10 min more. 10.
