My story is above all that of an enthusiast. A passion for traditions, craftsmanship and elegance that took me into the world of Whisky and of course the world of oakwood. From the age of 16, my apprenticeship began in Scotland as well as in France where I worked in the family's independent Cooperage.. Scotland is fascinating, its infinite landscapes, its indestructible mountains, its incredible myths and legends, its castles with a thousand enigmas, its islands hemmed with storms... make it a country mixing history, legend and dream. I started by collecting the peat needed to heat the stills, then I moved on to various distilleries and cooperages. I visited distilleries, met authentic people and it was then that I understood that Whisky, fire and wood would become my passion forever. After a few years with the “Threshers” Group and Richard Wright, my knowledge was further consolidated, I developed the nose, the palate and learned the art of making and restoring casks, learned about the major influence of wood in whisky. To day, the cooperage buys, repairs, rejuvenates barrels from all over the world. We sell fresh casks to Europe, Asia and America, we also export 1000's of American oak barrels to Europe and Asia each year from our dépot in the US. Our Independent bottling line is used by many independent growers in France. We also bottle under our own name , Fine Single casks, Malt and Grain whiskies .

  • With the festive season upon us, many of us will indulge with a glass of Port Wine or two... 2 kind of port stand out and the main difference between tawny port and ruby port lies in their aging process, color, flavor profile, and texture: 1. Aging Process Ruby Port: Aged for a shorter time (typically 2-3 years) in large stainless steel or concrete tanks, which minimizes oxidation and preserves its bright, fresh character. Tawny Port: Aged for longer periods in smaller wooden barrels, allowing gradual oxidation and evaporation. This process mellows the wine and imparts nutty, caramelized flavors. 2. Color Ruby Port: Retains its deep red or "ruby" color due to minimal oxidation during aging. Tawny Port: Develops a lighter, amber-brown hue as a result of prolonged oxidation. 3. Flavor Profile Ruby Port: Fruity flavors dominate, such as blackcurrant, cherry, and plum. It has a fresher and more vibrant taste. Tawny Port: Displays complex flavors of caramel, nuts, dried fruits, and toffee, with a smooth and velvety texture. 4. Texture Ruby Port: Often full-bodied with a bold, youthful intensity. Tawny Port: Smoother and more delicate due to the extended aging process. 5. Serving Recommendations Ruby Port: Pairs well with dark chocolate, strong cheeses, or berry-based desserts. Tawny Port: Complements nut-based desserts, caramel dishes, and lighter cheeses, or can be enjoyed as a dessert on its own. In short, ruby port is youthful and fruit-forward, while tawny port is aged, nuanced, and complex.   • "The Vin Santo di Montepulciano 2001 (375 millilitres) is a divine and wonderfully delicious sweet blend of Trebbiano, Malvasia and Grechetto. The result is very concentrated and boiled down to a delicious reduction sauce. There are so many flavours to list, but among the most obvious are candied orange peel, almond marzipan, caramel, roasted coffee beans, vanilla bean, mocha, dark honey and fragrant yellow roses. The mouthfeel is creamy, rich and layered. Compared to the Occhio di Pernice, I recommend a slightly shorter drinking window here. But, the truth is: I have no idea. I'm pretty sure these wines will outlive anyone who has reached legal drinking age."
