  • Word association time! What 4 words come to mind when you think "texture of frozen blueberries"? As part of a larger study on consumer liking and characterization of blueberries, Rachael Moss, Allison Stright, Laura Baxter, and Matthew McSweeney gave this word association task to consumers to understand how spontaneous language used to describe frozen blueberry texture. Before this study, there was already ample evidence that consumers prefer sweet berries over sour, bitter berries, but less was known about texture. The top texture terms consumers mentioned were Firm, Crunchy, Soft, Juicy, Smooth, Mushy, Tough, Chewy, Squishy, Mealy, Tender, Hard. Consumers liked juicy, firm, crunchy blueberries over mushy, tough, squishy blueberries. So, this month, we celebrate both this publication and the delicious blue-indigo pearls of midsummer, which we can enjoy year-round thanks to the the food supply chain and the miracle of refrigeration. #sensoryscience #research https://lnkd.in/gDY2ecD8

  • This month, we celebrate a publication by Daniel Schoonbrood and Julien Delarue Delarue titled “Exploring the effect of familiarity on sports performance food perception in various simulated consumption contexts”. Each consumer evaluated three energy bars in one context (office break, pre-workout, or outdoor break) simulated in an immersion room and evoked by a written description. The high-familiarity (n=121) consumer segment liked energy bars more and considered energy bars more appropriate across contexts than low-familiarity (n=120) consumers. The two segments rank-ordered the products similarly. Consumers in the office break condition liked and considered energy bars higher in appropriateness consumers in other contexts. Post-study focus groups explored why. Some consumers wanted to fast for activities they expected to do in the pre-workout and outdoor break conditions, such as running.
