However, as flatbreads have grown to become a valued staple worldwide, technology has provided answers to all its production challenges, to match traditional handcrafting techniques. In the latest edition of 𝗕𝗮𝗸𝗶𝗻𝗴 𝗮𝗻𝗱 𝗕𝗶𝘀𝗰𝘂𝗶𝘁 𝗜𝗻𝘁𝗲𝗿𝗻𝗮𝘁𝗶𝗼𝗻𝗮𝗹, we look at 𝗣𝗶𝘇𝘇𝗮 𝗮𝗻𝗱 𝗙𝗹𝗮𝘁𝗯𝗿𝗲𝗮𝗱 𝗹𝗶𝗻𝗲𝘀 in more detail. We discover that AMF Bakery Systems Europe has developed equipment lines that fully automate the production of naan and other flatbread specialties. The items are baked with traditional ingredients, but upscaled to higher production volumes. With these lines, naan breads can be cut into the traditional teardrop shape and baked on a Den Boer brick tunnel oven, all of which contribute to the bread preserving its traditional feeling. The specialists from AMF Bakery Systems Europe explain how automating some steps contributes significantly to efficiency. “Capacity and throughput are always scalable in our design philosophy. But the specific shape of a product, a specific proofing, baking, or decorating process, means tailored solutions to design a line like this. In most cases, this is solved by using standard technology and machines, sometimes tailored to a specific need. And always by integrating in existing situations, for fluent flow and process control,” AMF details. 𝐏𝐚𝐬𝐭𝐫𝐢𝐞𝐬 𝐠𝐞𝐭𝐭𝐢𝐧𝐠 𝐫𝐞𝐚𝐝𝐲 𝐟𝐨𝐫 𝐭𝐫𝐚𝐧𝐬𝐩𝐨𝐫𝐭 As the bakery industry continues to grow and evolve, there is an increasing demand for automation to optimize production processes and reduce labor costs. One area where automation can make a significant impact is the packaging process. No skilled labor is needed to pick and place the pastries. We’re happy to perform a feasibility test for a local bakery in our customer testing area in Cologne. An igus gantry system in combination with hygienic grippers of Soft Grippers picks a “Berliner” – a specialty around Carnival here in the Rhine area – and gently places it into a transportation box. Traditionally, this process has been done manually, with workers using their hands to transfer baked goods from one tray or conveyor belt to another. It’s a great example of how automation leads to increased efficiency and reduced labor costs. I’m happy that traditional crafts such as bakeries benefit tremendously from #lowcostautomation.
