No-one else knows the place you working at better than you do. You are the one who is inside that organization. Yes sure you are hired for a specific role or Graduate Program. However think in terms of Pain points. What or Whose pain point can I solve today. During the Operations/Production meeting listen to people's pain points and see what you can do about them.
Most likely the company you are working at is not the only doing that kind of job, research how other companies are handling that problem.
Sure shout when you need help but research, research for yourself. The internet is full of information.
Thomas Edison says: " Opportunity is missed by most people because it is dressed in overalls and looks like work."
Which is very true.
Back in 2007/2008 I think there was about 6 if not 7 of us doing our intership at that Tier1 Automotive supplier company, the OEM was helping their suppliers implement Lean, they called it Toyota Production System. All six/seven of us had an opportunity to do a project and submit to the OEM to receive a certificate in Toyota Production Systems.
But if my memory serves me correct only one guy submitted. My dear friend found a project and followed the process to submit to be certified.
Did the rest of us not have projects?
No, we had projects, we just didn't feel like doing the work required for submission to be marked.
Heck, One of the projects I did on standard times led to me doing a project on #SMED which then led me to Production planning. But I didn't submit. I missed the opportunity to be certified.
That place was full of opportunities from Raw Material Stores, Production Planning, Despatch, Maintenance, Chemical Plant.
I think another fortunate thing was that, there were Mechanical, Industrial and Chemical Engineering interning at that Period we learned a lot from each other and collaborated with each other.
Look around you and find opportunities for yourself.
