What do Chipotle, Potbelly, Shake Shack, and Wingstop all have in common? If you guessed that they're all fast-casual restaurants, you'd be right. But if you guessed that they've all been quite successful in the recent past, despite inflation, you'd be right again. As it turns out, fast-casual restaurants have been dominating the restaurant industry lately. I find it fascinating just how versatile fast-casual experiences can be—assembly lines, counter service, etc. This versatility means that the market still has tons of room for innovation and growth—there are no set rules or expectations for how things "need" to be.
