These toxins are harmful to human health, particularly impacting liver function and potentially leading to severe health complications. How can the food industry minimize the amount of aflatoxins present in food? The following advice is given to the industry: To prevent the formation of mold and the production of aflatoxin in crops, 🔹Control the circumstances during transit and storage, including temperature, water activity, aeration, and storage duration. 🔹Use chemical techniques to reduce the amount of aflatoxins in food and feed, such as treating with organic acids, ammonia, ozone, or enzymes. 🔹For the processing and preparation of food, get raw ingredients from reliable reputable vendors. 🔹Implement Hazard Analysis Critical Control Point (HACCP) and/or Good Manufacturing Practices (GMP) initiatives. Contamination in foods occur at 6 different stages; ✅ Production ✅ Processing ✅ Transportation ✅ Storage ✅ Marketing ✅ Consumption Sources of food contamination includes; 🚫 Mycotoxins: are chemical toxins produced by fungi that grow in crops and foods. 🚫 Pesticide/herbicide residues: are present in minute portions on fruits and vegetables. 🚫 Food additives: are used as colouring or gelling agents in foods. But may cause food issues when used inappropriately. 🚫 Aflatoxins: are natural toxins produced by fungi found in nuts and grains. Measures to employ in reducing food contamination: 1️⃣ Regular hand washing, 2️⃣ Separation of raw and cooked foods, 3️⃣ Thorough cooking to kill pathogens, 4️⃣ Storage of foods at safe temperatures. 5️⃣ Use of safe water and raw materials in food processing.
