FILIPINO CUISINES is composed of the cuisines of more than a hundred distinct ethnolinguistic groups found throughout the Philippine archipelago. A majority of mainstream Filipino dishes that compose Filipino cuisine are from the food traditions of various ethnolinguistic groups and tribes of the archipelago, including the Ilocano, Pangasinan, Kapampangan, Tagalog, Bicolano, Visayan, Chavacano, and Maranao ethnolinguistic groups. The dishes associated with these groups evolved over the centuries from a largely indigenous (largely Austronesian) base shared with maritime Southeast Asia with varied influences from Chinese, Spanish, and American cuisines, in line with the major waves of influence that had enriched the cultures of the archipelago, and adapted using indigenous ingredients to meet local preferences. #filipinocuisines #Philippines #pinoychefinafrica

SARDINHA Did you know? Being Portugal a seafare nation, a nation of navigators and fisherman, it is not a surprise that a fish can be one of our symbols. The sardinha/sardine is in a way, a symbol of our culture and gastronomy. Either grilled during summer festivities like the Santo António in Lisbon, or the São Pedro festival up north, sardines are the protagonists and for a long time they were considered the mainstay for a lot of the poor families all over the country. Introduced by the Phoenicians, developed by the Greeks and Romans, put on hold during the Muslim occupation, brought back to life by the Knights of the Order of St John of Jerusalem... then once again undermined by the British to replace cotton with vines, the wine-growing history of the Maltese islands has been an eventful one! Considered one of the smallest wine-producing countries in the world (barely 500 hectares of vines), Malta has been producing wine for over 2,000 years. Three new appellations were created in 2007 to further promote quality: D.O.K. Malta and D.O.K. Gozo, for the two islands, and the more global I.G.T. Maltese Islands.
