🥃 *DID YOU KNOW* 🥃 When you're nosing a whisky, don’t stick your nose right into the glass like Richard Paterson does, because if you’ve poured cask strength stuff, you’re going to go nose-blind and light headed. Here's some cool science shit they don't normally tell you at tastings. When you pour whisky, the alcohol ethers want to spread themselves as thinly as possible, like moss over forest floor. Within those Glencairns are not only whisky, but tonnes of research and development in the science of the glass. The ethers only have one way out, and that way is up, as you might see from my incredible photoshop skills. The purple lines represent the ethers and aromas pathway. Ethers behave in a particular pattern, so when you tilt the glass to a 45° and hold it up to your nose, bear in mind that the alcohol will sit just above the spirit, and the ethers will escape through the top of the glass. Firstly, nose just above the lip of the glass, cup the glass if you can, as the slight heat may awaken some vital aromas. Take short sniffs, don’t huff the stuff. Use both nostrils, with your mouth slightly open and really inspect the area. You might find ripe orchard fruits, woody influences, old dusty library books, tarmac, smoked kipper boxes. Don’t be afraid to write the wrong thing down in your nosing notes. This is your experience and it doesn’t belong to a single other person on this planet. You’ll notice that the more you nose it, the more you’ll notice. A lot of the tastings that I’ve attended often have that one person who’s afraid to look like 'that pompous whisky twat'. No one cares. You are in the theatre of whisky. There are meant to be some amateur dramatics. Simple procedure to be followed: Decent size cup/mug (Not Sports Direct Size!), Teabag (Taylors Yorkshire Tea best), (Must be) Boiling Water: Give It a good stir, Squeeze teabag out taking care not to split it open, a dribble of milk (Not skimmed) and you'll have a glorious taste sensation...looking like 1439-1432. If the milk goes in before (or with) the teabag pretend to faint, have heart attack, sudden illness.
Let me hit you with some Friday wisdom. If anyone ever offers to make you a cup of tea at work, you need to qualify whether they drink tea themselves. Else, you’ll likely get a shambolic cuppa. We put the designer’s Pantone book to good use at my last gig, with a simple wall chart so you knew the sign off criteria. My top tip for a good brew, put the water in + walk away, give it space. Don’t stand there looking at it, mechanically agitating, pressing the bag and all that palava. “It’s just tea, don’t overthink it Pete” they said. If only they knew.
