About four years ago, I planted some fruit trees at home and paid them little or no attention. Last year, they started fruiting. Of special interest is this Jumbo Guava and this is not the biggest, I had given a quiet gentleman who admired it on the tree when I harvested it. ----------------------------------------------- Seriously, fruit trees are a treasure, grow directly or inside big pots, you will get to harvest them some day ---------------------------------------------- Guava is showing up in some places as a highly recommended fruit for some ailments. I'm surprised. The tiny seeds inside used to put me off eating them. Now I know there is a process to eating Guava. Tallow time! ‘Back in the day’ home cooks would have a little jar of this sitting on the kitchen counter, taken from any beef they’ve cooked with the intention to reuse the fat for frying other foods, roasting veg, making gravies and sauces... It fell out of favour with that extreme move to ‘health’ food that declared all fats bad, but it’s also suffered from people not cooking as much as they do at home as they used. But it’s making a comeback as people recognise the benefit of eating natural foods, and for it’s zero wastage origin - the more we can use of an entire animal, the better for the planet! I’m loving seeing it in stores, and especially a great brand like Wolki Farm who are an amazing enterprise who take holistic high welfare farming with a small environmental impact to the next level in NSW. From Green Beans to Gratitude: A Reflection on Food and Farming The weekend after Thanksgiving always feels like a downshift—from 8th gear to 4th—slowing down after the whirlwind of the holiday. Last week, during a conversation about traditional holiday dishes, green bean casserole came up. Someone mentioned they still needed green beans but insisted on fresh ones, even though they’re out of season. That comment got me thinking about how far removed we’ve become from the food traditions of my childhood. Growing up, green bean casserole wasn’t made with fresh beans—it came from a can. My family wasn’t wealthy, but holidays were rich in love and creativity. My dad would bring home a turkey from work, and its size was always a gamble. The sides, whether simple or with a Portuguese twist, turned humble ingredients—canned or frozen beans—into dishes filled with care and flavor. Today, we live in a time where nearly anything is available year-round—often at an inflated price. But in New England winters, fresh green beans are three or four times the cost of canned. This highlights a disconnect between consumer expectations, seasonal availability, and food access. As someone who once relied on food stamps, I feel the weight of dismissive comments like, “My wife wouldn’t eat that.” Our food system reflects our values—or, sometimes, a lack of them. It takes an average of 60 labor hours per week per acre to grow vegetables, yet farmers often sell crops for less than their worth because food remains undervalued. Remember the early COVID-19 shutdowns and how precariously close we came to a food system collapse? Those moments should remind us of both the fragility and critical importance of agriculture. This holiday season, as you enjoy your meals, pause to consider the farmers behind every dish. Each bite represents hours of hard work, resilience, and sacrifice. Let’s honor the food on our tables and the people who make it possible by treating both with the respect they deserve.
