🍅 Healthy Tomato Basil Soup 🍅
This delicious and comforting tomato basil soup is made with roasted Roma tomatoes, fresh basil, and creamy coconut milk. It’s a perfect warm bowl for any season, especially when you’re craving something light yet full of flavor! 🌿✨
Ingredients:
- 2 1/2 pounds Roma tomatoes (or plum tomatoes)
- 2 1/2 teaspoons salt
- 1 1/2 tablespoons avocado oil or extra virgin olive oil
- 1 large yellow onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon tomato paste
- 2 cups chicken bone broth
- 1/2 teaspoon apple cider vinegar
- 1/2 cup full-fat coconut milk
- 1/4 cup fresh basil leaves, minced (plus more for garnish)
- Freshly ground black pepper
- Shredded cheddar (optional)
Preparation:
1. Preheat the oven to 375°F (190°C).
2. Cut the tomatoes in half and place them cut-side up on a baking sheet. Season with 1 teaspoon salt and drizzle with 1 teaspoon oil. Roast for 25-30 minutes, until the skins are wrinkled and the insides are bubbling.
3. While the tomatoes roast, prepare the onion and garlic. In a large saucepan over medium heat, warm 1 tablespoon oil.
4. Add the chopped onion to the saucepan and sauté until almost translucent. Add the garlic and reduce heat, stirring until aromatic and softened (about 3-5 minutes).
5. Transfer the roasted tomatoes, onions, and garlic to a blender or food processor. Blend on high for 2 minutes until smooth.
6. Return the mixture to the saucepan over medium heat. Add the tomato paste, broth, apple cider vinegar, coconut milk, and basil. Stir until all ingredients are incorporated and warmed through (about 2-4 minutes).
7. Turn off the heat and ladle the soup into bowls. Garnish with basil, black pepper, and optional shredded cheddar.
8. Serve piping hot and enjoy the fresh, rich flavors! 🍲✨
