Dried garlic is used for meat products, soups, sauces and many food supplements. Garlic can be dried using air-drying, vacuum-drying, infrared hot-air drying and freeze-drying. Such drying techniques enable the production of dried products that meet quality and microbiological standards. However, research on the loss of potential health benefits associated with the retention of bioactive compounds, including allicin and phenolic compounds, or resulting from poor storage conditions is still limited. Therefore, the introduction of proper hot-air drying and storage conditions for developing countries can easily eliminate garlic post-harvest losses, quality changes and potential health benefit decreases. Hot-air drying is a method with much potential in tropical and subtropical countries.

Here's a breakdown of their differences: 𝐅𝐨𝐨𝐝 𝐀𝐝𝐝𝐢𝐭𝐢𝐯𝐞𝐬 are substances added to food to achieve various purposes, including: 1️⃣ 𝐄𝐧𝐡𝐚𝐧𝐜𝐢𝐧𝐠 𝐅𝐥𝐚𝐯𝐨𝐫: Additives like MSG (monosodium glutamate) or artificial sweeteners. 2️⃣ 𝐈𝐦𝐩𝐫𝐨𝐯𝐢𝐧𝐠 𝐀𝐩𝐩𝐞𝐚𝐫𝐚𝐧𝐜𝐞: Colorants and glazing agents. 3️⃣ 𝐌𝐚𝐢𝐧𝐭𝐚𝐢𝐧𝐢𝐧𝐠 𝐓𝐞𝐱𝐭𝐮𝐫𝐞: Emulsifiers, stabilizers, and thickeners. 4️⃣ 𝐈𝐧𝐜𝐫𝐞𝐚𝐬𝐢𝐧𝐠 𝐍𝐮𝐭𝐫𝐢𝐭𝐢𝐨𝐧𝐚𝐥 𝐕𝐚𝐥𝐮𝐞: Vitamins and minerals added for fortification. 5️⃣ 𝐄𝐱𝐭𝐞𝐧𝐝𝐢𝐧𝐠 𝐒𝐡𝐞𝐥𝐟 𝐋𝐢𝐟𝐞: Preservatives. 𝐓𝐲𝐩𝐞𝐬 𝐨𝐟 𝐏𝐫𝐞𝐬𝐞𝐫𝐯𝐚𝐭𝐢𝐯𝐞𝐬: 1️⃣ 𝐀𝐧𝐭𝐢𝐦𝐢𝐜𝐫𝐨𝐛𝐢𝐚𝐥𝐬: Prevent the growth of bacteria, mold, and yeast (e.g., sodium benzoate, potassium sorbate). 2️⃣ 𝐀𝐧𝐭𝐢𝐨𝐱𝐢𝐝𝐚𝐧𝐭𝐬: Prevent oxidation, which can cause rancidity and spoilage (e.g., BHA, BHT, tocopherols). Though there are many more, this will clarify that while all food preservatives are food additives, not all are preservatives. I came across Just Egg, plant-based liquid egg substitute. Lovely list of ingredients: Water, Turmeric, Dehydrated Onion, Nisin, Mung Bean Protein Isolate (UPF), Salt, Expeller-Pressed Rapeseed Oil (UPF), Soy Lecithin (UPF), Gellan Gum (UPF), Carotene (dye), "natural" flavours (not listed), and the rest... Tapioca Syrup and Sugar - we know all about weight gain, type 2 diabetes, heart disease, and dental problems. Tetrasodium Pyrophosphate - can cause imbalances in mineral levels, potentially leading to bone density loss. Potassium Citrate - excessive intake can lead to hyperkalemia, affecting heart health. Transglutaminase - linked to higher increased risk of bacterial contamination and may also worsen celiac disease or gluten sensitivity symptoms. If compared to what we can find inside the actual (large) egg: Carbs: less than 1 gram Choline: 31% of the Daily Value (DV) Selenium: 28% of the DV Vitamin B12: 21% of the DV Vitamin B2 (riboflavin): 16% of the DV Vitamin D: 6% of the DV Iron: 5% of the DV the picture is rather clear. What an unnecessary, processed load of nothingness. It's not even certified vegan as it had been tested on animals. Best part? It cost around $9 for 454 grams, which they claim is "the equivalent" of 10 eggs. Only yesterday, I got 12 large eggs from my local supermarket for £3.38 (ca. $4.20).
