So if there's a standard that we want to execute to then we have to live the standard and show the standard so that people can identify with it, see it in action, and understand that we're going to hold them accountable to it. | Leadership Lessons in F&B: Managing People, Not Just Plates | As anyone in food and beverage knows, the real magic (and challenge) isn’t just in the food – it’s in the team making it all happen. Over the years, I've learned that every great service depends as much on the people as on the ingredients. But sometimes… well, let's just say the people can be a bit more spicy than the food! A while back, I walked into a busy dinner service to find two line cooks, both with prominent personalities, locked in a "debate" over who had the best plating skills. It was escalating fast, and I knew we needed to defuse the tension before it boiled over. Instead of stepping in with strict orders, I decided to make a game out of it. I told them, “Alright if you think you’ve got the best plating skills, let's have a ‘Master Plater’ contest. The winner gets bragging rights for the week.” Suddenly, the focus shifted from conflict to friendly competition. Not only did they put their best into each plate, but the whole team got behind it, cheering them on and raising the energy. Takeaways for any aspiring leaders out there: 1. Keep things light when tensions rise. A little humour can go a long way in defusing conflict. 2. Turn competition into collaboration. Healthy rivalry can actually drive better performance. 3. Remember the big picture. In our business, every member is crucial, from the dishwasher to the chef. To all the young leaders out there – managing people is just as much about creativity as managing the menu.
