Precooling is the removal method of “field heat” from freshly harvested produce to slow down metabolism and reduce deterioration before transportation or storage. Field heat is the difference in temperature between the actual temperature of the crop harvested and the preferred optimal storage temperature of the produce. Part 1/7 - MAP Enhancer Pads for a longer shelf life of fresh meat and fish MAP stands for "Modified Atmosphere Packaging" and is essential for the packaging of fresh food. The cause of spoilage of fresh meat or fish in unopened packaging is oxygen. This oxygen is displaced from the packaging by the MAP process in order to increase the shelf life many times over. However, fresh food also absorbs this protective gas, so that the proportion in the packaging decreases over time. The MAP Enhancer Pad from McAirlaid's emits small amounts of protective gas on contact with escaping liquid, so that the amount required in the packaging remains constant. In addition, the pad and the reduction of microbial growth extend the minimum shelf life by up to 5 days, depending on the contents of the packaging.
