NEW from me: Mondelēz International has placed its second bet on Israeli cultured cocoa startup, Celleste Bio. Celleste says it is has been using my real cocoa cells to grow real cocoa butter and cocoa powder in their lab and they are now ready to start scaling up. The cocoa market has been on a wild ride this year, leaving a door wide open to real alternatives to standard cocoa. While cultured meat has had a lot of challenges in commercialization, plant cells should be easier and less costly to grow, according to Celleste’s CEO.
