I've managed over 400k customers a year. Here's a lesson that benefits all industries. There's a funny thing about the restaurant business: You can plan meticulously, but some days, nothing goes your way. The shipment arrives late, the new hire cancels last minute, or the kitchen equipment decides to take a nap. Meanwhile, you have customers lining up. Bad days just happen. But here's the catch: They don't define YOU. Not unless you let them destroy your Passion. Here's what I've learned from turning around restaurants: 𝗔𝘀𝘀𝗲𝘀, 𝗗𝗼𝗻𝘁 𝗦𝘁𝗿𝗲𝘀𝘀 → When things go wrong, stop and analyze. → Ask what went off and why. → This is your opportunity to learn and improve. With (business perspective) love for the program of Gordon Ramsay “Kitchen Nightmares” 18 out of 84 restaurants remain open, certainly paint a complex picture about the difficulty of turning around struggling restaurants. Statistic doesn't necessarily mean that it is impossible to turn around a business if its core is not okay. It highlights a few important insights about business turnarounds in the restaurant industry, some general considerations: 1. **Complexity of Issues**: Restaurants featured on "Kitchen Nightmares" often face a multitude of problems, ranging from poor management, substandard food quality, financial troubles, inadequate marketing, to deep-seated organizational issues. 2. **Sustainability of Changes**: While Gordon Ramsay can implement immediate changes, sustaining these improvements requires ongoing commitment and effort from the restaurant owners and staff. 3. **External Factors**: The restaurant industry is highly competitive and sensitive to numerous external factors such as local economy, changing consumer preferences, and even unforeseen events like pandemics. 4. **Long-Term Ownership Commitment**: Effective management is crucial for the long-term success of any business. If owners and managers are not fully committed to embracing and maintaining the changes, the restaurant will fall back into old patterns ### Considerations for Business Turnaround 1. **Thorough Assessment**: Successful turnarounds begin with a thorough assessment of all aspects of the business. Identifying core problems is the first step to crafting effective solutions. 2. **Holistic Approach**: Addressing symptoms isn't enough; the root causes of the issues must be targeted. How did the Raising Cane’s quick-service restaurant chain build such a strong culture in an industry notorious for high employee turnover rates? And how has that culture contributed to the company’s phenomenal financial success? The enclosed QSR magazine article shares a compelling story. But I’m going to tell you one that isn’t reported below. In 2020, when the COVID-19 pandemic upended the restaurant industry, Raising Canes avoided layoffs and recovered lost sales remarkably fast. How? The answer came down to leadership. Before COVID-19 struck the United States hard and China was being overrun with the pandemic, the company’s leaders recognized the seriousness of the impending crisis. They stopped everything they were doing and went into crisis planning mode. While restaurants were still open for dine-in service, Raising Cane’s strictly enforced social distancing measures at all locations and placed a strong emphasis on sanitization. As shelter-in-place orders were issued, the company quickly adapted by mobilizing its workforce to enhance the drive-through experience. Additionally, Raising Cane’s shifted its marketing strategy to highlight its commitment to safe hygiene practices. Of roughly 500 restaurants, 33 non-drive-through locations temporarily closed. But the company’s leaders refused to furlough or lay off any of their 23,000 workers. Raising Cane’s also redirected idle employees to produce face masks for frontline workers battling COVID-19. Raising Cane’s provided sewing machines and necessary supplies for this task. As co-CEO Todd Graves told QSR magazine in 2020, “Our mantra then was no crew member left behind. I wanted the team that went into this pandemic to be the team we come out with.” I never forgot that story after I read it in QSR magazine four years ago. I’m not surprised to learn that the company continues to thrive through strong leadership and a commitment to the workplace. Have you ever been to a Raising Cane’s? I love the atmosphere. I even banter with the employees in the drive-through when they greet me with a “Yo, yo, yo, get your chicken to go!” The food? It’s tasty. But there are many other options where I live.
