We're happy to be here. So can you tell us a little bit about yourself and about Veritas? And sure. So I'm the founder and CEO of Veritas. And we are a office of CFO and an ailment consulting firm and serving primarily private equity. So this is the right room to be in for sure. Yeah, absolutely. What was the goal for you guys to come in today? What are you looking to get out of the event? We're looking to speak to as many private equity funds possible as possible. That that can become new clients. That's simple. That is simple. Is this your first time here? It is my first time here. It's our first time as a first time as a firm attending, but as our first time. Sponsoring or being the lead partner. OK. And have you been involved with CG for a long time? Yeah, Yeah, we have selectively, yeah, but we have across the country. We're also a national firm. So we were actually just, I was just at the Capital Connection in Chicago. That's where I'm headquartered, where I live in Chicago. And so we were there and hosted a big event, also a big wine focused event the first night of the conference. Excellent. So I'm sensing a wine theme. There's a wine theme. It's a wine theme. I thought that. This was definitely when we were looking at the profile of the ACG conferences that we could sponsor be part of this was definitely this is definitely one and why so our corporate gift, this is not for this amazing this conference. And so we're like OK, of all the events, This Is Us and it's made for you. I can confirm that we are the only. Person here pouring our own private label that is that is special. We like to stand out. And is this red white? What kind of this is a piano? So we do a Chardonnay and Pinot every year. OK. At the table though, we have two pinos, we have an older one and this is the new bottling. And for our five year anniversary a couple of years ago, we did a cap. So we have 4 different four different wines of the table. And what's your favorite? All of them. Good answer. ever tried to adjust CO2 on a red wine in order to reduce the edge of tannins and improve smoothness of the mid-palate? This is achieved with different peculiarities, but with a comparable impact on taste to what happens to red wines during micro-oxygenation.
For this tasting we have modulated the content of CO2 using an instrument called ISIOX. It works with a membrane which only allows the exchange of certain gasses without stripping aromas. The wine treated flows through a hydrophobic molecular sieve in counterflow to the technical process gas. The partial pressure difference results in the subtraction or addition of low molecular weight gases dissolved in the product.
Other than just removing CO2, which will be the focus of the tasting, ISIOX can remove O2, an important step especially following tartaric stabilization, during pre-bottling, or when unloading tank-trucks.
ISIOX is also the instrument to be used when adding 2-3 g/l of CO2 to adjust the wine’s vibrancy before bottling.
Ultimately, wines processed through ISIOX also have less H2S and methyl mercaptans. Should be fun!
