I feel private chefs are often misunderstood and struggle to get back into commercial kitchens. For some reason, most hiring managers assume that being private chef means cooking 3 meals a day for a family of 4 every day. When in reality these guys: 👉Often manage multiple kitchens across multiple properties (teams of 20-30 chefs). 👉Have to cater to large events at a very short notice (one of the chefs I know was told to cater to 2000 with 2 days notice). 👉Have to be experts at nutrition, calorie restriction and dietary requirements. 👉Travel around the world having to work with different ingredients every week. 👉Have to be great at every part of cooking - whether it be pastry (you all know it's an entirely different skillset), grilling, fermenting, menu design etc. It's disheartening to see how chefs who don't want to be on call 24/7 any more, face constant rejections from restaurants and hotels.
