Cymbiotika Eats x Windansea Coconuts Ceviche Thanks so much to Casey Kueltzo and the Cymbiotika team for inviting us to their incredible office!  Ingredients: 1 lb fresh white fish (snapper, tilapia, or sea bass), diced 1 cup fresh lime juice (8-10 limes) 1 small red onion, thinly sliced 1 jalapeño, finely diced (optional) 1 cup cherry tomatoes, halved 1 cucumber, diced 1/4 cup fresh cilantro, chopped 1 avocado, diced Sea salt & black pepper to taste 1/4 cup toasted coconut flakes  Instructions: - Dice the fish and marinate in lime juice for 30-45 minutes until opaque. - Mix in red onion, jalapeño, tomatoes, cucumber, and cilantro. - Season with salt and pepper, and gently fold in avocado. - Top with toasted coconut flakes. - Serve chilled with tortilla chips, in a small bowl or a coconut!

Exciting Weekend for the Windansea Team! We are thrilled to be reconnecting with our amazing friends, partners, and clients for our upcoming events this weekend. Sunday morning, we will be back with Vuori to hydrate the ACTV club, along with BLOND BRANDS at the Pendry Hotels & Resorts Pool House to kickoff their wellness club.
