Chef Sean MacDonald created a beyond interesting and flavorful menu inspired by the Compass Box’s Core Collection for our recent On The Pass Experience. His menu below paired perfectly with custom cocktails and neat pours of the Core Collection’s Nectarosity, Crimson Casks, Orchard House and The Peat Monster: First: Raw Scallop. Almond. Fish sauce. Yuzu. Bites: Mushroom croquettes. Manchego, picked peppers. Jamon. Housemade grilled sourdough. Tomato. Nduja vinaigrette. Second: Corn agnolotti. Cultured butter. Third: Slow cooked beef check. Oxtail massaman curry jus. Thai herbs. Fourth: Strawberry, lime and fresh cream.
