Medicat's Director of Sales, Nick Ferrari, shared his go-to recipe for festive cookies that combine rich chocolate and refreshing peppermint—perfect for holiday gatherings! 🔥 Directions: - Preheat oven to 350°F. Line two baking sheets with parchment paper. - In a stand mixer or with a hand mixer, cream together butter, both sugars, and pudding mix until just combined—don’t overmix! - Add eggs, vanilla extract, and mint extract, mixing until incorporated. - Gradually add flour and baking soda, mixing until fully combined. - Fold in chocolate chips and crushed candy canes. - Use a cookie scoop (or your hands) to form rounded dough balls and place them on the prepared baking sheets. - Bake for 10–12 minutes, or until cookies are lightly browned. - Let cookies cool for 1–2 minutes before transferring to a cooling rack. ☕ Enjoy with a warm cup of hot chocolate for the ultimate holiday treat! #HolidayRecipes #PeppermintRecipes #CompanyCulture #EmployeeRecipe

A report from the Knight Foundation dives into the evolving dynamics of free speech on college campuses. Here are three stats that stood out: 1️⃣ Confidence in free speech is plummeting: While 90% of students believe free speech is vital to democracy, confidence in its security has dropped 30 points since 2016 – driven largely by Democratic students. 2️⃣ Speech is seen as impactful – even harmful: Nearly 7 in 10 students say speech can be as damaging as physical violence. Additionally, discomfort with campus speech about race, gender, or religion has almost doubled since 2017. 3️⃣ Self-censorship is holding students back: 2 out of 3 students admit to self-censoring during classroom discussions, limiting open and educationally valuable conversations. Note: This is a 2-day recipe, so buckle up! Directions Day 1: Separate egg yolks and whites (save whites for Day 2, refrigerate). Beat yolks until thick and lemon-colored. Gradually add sugar, vanilla, and nutmeg while beating. If using alcohol, mix it in now. Chill mixture overnight. Day 2: Add cream and milk to the chilled mixture. Stir well. Beat egg whites until soft; gradually add final 3 Tbsp sugar and beat until stiff. Gently fold the egg whites into the mixture.
