About us

Pam Weekes and Connie McDonald created Levain Bakery in 1995, out of their passions for food, friendship, and hard work. Competitive swimmers and triathletes, Pam and Connie passed their workouts by engaging in passionate conversations about baking, which inspired them to open a small bread shop in 1995, which they named Levain Bakery. One day, they created an ultimate chocolate chip walnut cookie to give them energy while training for a triathlon. They decided to sell a batch in their bakery, and they flew off the shelves. An icon was born. The cozy shop on West 74th Street became a neighborhood favorite and a destination for epicurious travelers from around the world. From the start, they baked everything fresh on-site each day and donated the day’s leftovers to charity each night, actions that remain solidly in since 1995. Levain Bakery now has a handful of locations in their favorite neighborhoods across the country with more to come, as well as e-commerce gift boxes.

    Sweet Sixteen Alert! 🎉 We’re thrilled to celebrate a major milestone—the grand opening of our 16th bakery at Boston Seaport! This one feels extra special, and we couldn’t have done it without the incredible support of our community. 💙 To mark the occasion, we proudly donated 100% of our first-day proceeds to the South Boston Neighborhood House, a wonderful organization that has been making a difference in the lives of local families for over a century. South Boston Neighborhood House focuses on strengthening families and building community through programs in youth development, early education, family engagement, and senior support.     POV: You Learn How Levain Became One of NYC’s Best Chocolate Chip Cookie Bakeries From meeting in a swimming pool to creating NYC's most iconic cookies, Levain Bakery founders Connie and Pam turned a small idea into a big-time obsession. Here’s what I learned on our walk through their story: 1. Every Big Idea Starts Small – Levain was born in a tiny shop on 74th Street where they mainly baked bread. The legendary chocolate chip walnut cookie was just something they baked for themselves as a post-triathlon snack. That first batch of 12 cookies was an instant hit, and from there, a cookie phenomenon was born. 2. A Friendship Fueled by Fitness (and Baking!) – Connie and Pam’s friendship didn’t begin with a business plan; it started at a swimming pool! While training for an Ironman, they bonded over their love of baking and a shared dream of owning a business. This friendship-first approach has kept their passion strong through all the years of growing Levain. 3. Keep It Simple and True – Their “secret ingredient” isn’t just in the recipe; it’s in their philosophy. “We make things that we love, and we keep it simple,” they said. By putting care into each cookie and staying true to their tastes, they’ve created treats that people line up around the block for. 4. Take Your Time, and Make It Worthwhile – Levain’s team doesn’t rush new flavors. It took them two years to perfect their lemon cookie, but their patience pays off. Each new cookie, like their take on the black-and-white, brings something different and gives people a reason to return.     Building community happens beyond our bakeries. Our team took it to the field to play a competitive softball game against our friends at the NYPD community affairs bureau, to support our friends at Hot Bread Kitchen.   Hot Bread Kitchen’s mission is to create economic opportunity for women and gender-expansive people, immigrants, and people of color through job skills training, food entrepreneurship programs, and an ecosystem of support in New York City.   We are grateful to have spent a sunny afternoon in Central Park for a purpose we care deeply about and we may have found some new MVP athletes at Levain along the way.
