Appreciative of the time spent with Executive Chef Matthew Ward at University of North Texas. The time they dedicate to providing plant based, sustainable foods to their students is impressive. They are the first and at this time only university dining to have a 100% vegan dining hall. They also have other halls but one is fully dedicated to vegan options. He's also a Co-Chair of MCURC. The Menus of Change University Research Collaborative (MCURC) is a network of executive chefs, foodservice leaders, and scholars who work to make college and university food more sustainable and healthy. Such important work being done. Here we are in one of their hydroponic gardens on campus. And yes, in Texas!
