Ellsworth Cooperative Creamery is based in the Heart of Wisconsin’s Dairyland in the town of Ellsworth, WI.

About us

Located in the heart of Wisconsin’s Dairyland, Ellsworth Cooperative Creamery produces 190,000 pounds of cheddar cheese curds daily. They’re so delicious that we’ve earned the title of “Cheese Curd Capital of Wisconsin®”, a title bestowed by Governor Anthony S. Earl in 1983. Our all-natural premium cheddar cheese curds can be found in all 50 states and around the world. Our Wohlt Creamery, in New London, WI, joined the team in 2018. Specializing in high-quality and customized processed cheeses for food service, retail deli, and pre-packaged food manufacturers, at Wohlt, quality and innovation are woven into the culture. In early 2022, we opened our new production facility in Menomonie, WI. This new facility combines experience, tradition, and standards of quality with modern-day green technology for the lowest environmental impact to produce a variety of specialty block cheeses.

  • 🎄The holiday season is here, and at the Ellsworth Creamery, we’re feeling extra grate-ful! 🎄🧀 To celebrate, we’ve put a cheesy twist on a holiday classic. Whether you’re dreaming of cheddar or decking the halls with gouda, we hope this brings a smile to your face and a craving for curds to your plate. Happy Holidays from all of us at the Ellsworth Creamery! ‘Twas the night before Christmas, and all through the Creamery, Not a vat was stirring, not even a cheddar. The curds were packed in their cases with care, In hopes that cheese lovers soon would be there. The cheesemakers nestled all snug in their beds, While visions of muenster danced in their heads. With butterfat sweaters and whey-soaked caps, They’d just wrapped up a long season’s last batch. When out on the lawn there arose such a chatter, I sprang from my bed like a block on a platter. Away to the window, I flew in a dash, Tripping over a crate of sharp cheddar stash. The moon was like wheels of gouda so mellow, Gave a luster of gold and creamy yellow. When what to my wondering eyes did appear, But a sleigh pulled by cows—eight Holsteins, so dear! With a little old driver, so jolly and quick, I knew in a moment it must be St. Nick. More rapid than rinds, his cows they all came, And he whistled and shouted and called them by name: "Now Colby! Now Monterey! Now Pepper and Jack! On Cheddar! On Havarti! On Swiss, never slack! To the top of the silo, to the Creamery wall, Now churn away! Melt away! Dash away all!" As curds in hot whey will merrily float, The cows pulled the sleigh, light as curds in a tote. Up to the rooftop, the Holsteins they flew, With a sleigh full of cheese, and St. Nick too. And then, in a twinkling, I heard on the roof, The stomping and clomping of each bovine hoof. As I drew in my breath and turned all around, Down the milk chute St. Nick came with a bound. He was dressed in cream linen, from his head to his knees, And his clothes were all dusted with parmesan cheese. A bundle of blocks he had flung on his back, And he looked like a cheesemonger opening his pack. His eyes—how they twinkled! His dimples, how merry! His cheeks were like cheddar, his nose like a berry. His droll little mouth was drawn up like a slice, And the beard on his chin was as smooth as cream—nice! The stump of a spoon he held tight in his teeth, And the whey it encircled his head like a wreath. He had a broad face and a belly quite hearty, That shook when he laughed like a wheel of Havarti. He spoke not a word but went straight to his work, And filled all the stockings with curds and some quark. Then, laying a finger aside of his cheek, He turned with a wink, so jolly and unique. He sprang to his sleigh, to his cows gave a whistle, And away they all flew like whey off a thistle. But I heard him exclaim, as he drove out of sight: “Merry Christmas to all, and to all a gouda night!”

    Congratulations to the Ellsworth Cooperative Creamery team and their farmer owners for winning top honors at our annual Dairy Product Contest for their Garden Vegetable with Sweet Basil Rub cheese from their plant in Menomonie, WI! In the first year that butter was added to the competition, Upstate Niagara Cooperative, Inc. received the Reserve Chairman’s award for its salted butter produced in Batavia, NY.
