Last-minute cancellations by a community partner are the perfect opportunity to think outside the box to salvage the situation. I would find someone to replace the original partner or fill in myself. If I had a "Tickle Trunk of Ideas" I would look there for "ready-made" fill-in ideas to substitute for the canceled event.

The AI answer is a bit vague. In my case, I’m not alone in this, always have a plan B. It’s often too late to get the message out and people plan ahead to attend events. There should be something related in your backup plans and it helps to keep a list both in-house and outside, of people to offer last minute openings to. Never waste your patrons time!

What role does the community partner play? If it's shared delivery, especially with a regular partner, perhaps they could share their materials and we deliver without them? Or include them in a different way? If they are subject experts, could we change it into an interactive activity where attendees share their own knowledge? This is also a great chance to show off the stock we have on that subject! If this is a children's event, we could create a simple craft or puzzle activity on the subject matter. How ever we respond, communication is key - it only takes a couple of minutes to get a message out on social media. Focus on the positive - its still going to be a great event!
