My approach for these problems is: 1. Set a general set of questions to be asked before starting the project so that you get the basic idea. If they don't have any references themselves, present some from your side and get them approved before starting. 2. Breakdown your project in steps like Modeling, Texturing, Rigging, Animation, Render, Post process. Show your project stepwise to the client and get it approved. So that you can avoid major changes after completing the whole project. 3. Set a number of changes you will do in the project without additional project cost beforehand. If they change the project entirely from the starting concept, charge them accordingly. Always take some advance while doing such projects too.

It's important to Breakdown the steps involved in executing the project into different phases, and clearly define the scope of work along with the scope of revisions that you are going to include in the package. Sometimes in creative work changes aren't easily quantifiable, in that case just see how much time does that particular change demand. If it's very quick to execute then treat your clients to it. If not, then know when to push back, or to charge extra for the work. Communicate Everything. The key is tracking changes against the time taken to execute them. We don't want to include cost revisions for the smallest changes, but we also don't want to stretch the scope of work beyond a limit without including additional cost.

I have been went through this situation in many projects & deal with customer with multiple changes where customer also don't have any clue how to give proper input.As per my experience to deal with this is proper communication! Yes,communication is more important rather than the 3D data accuracy at the Project development stage.Share all the details daily/Weekly basis for customer review & keep asking them for approval/confirmation.Keep sharing 3D models with customer for review even if a little data received form customer.Once they realize the team effort that they will provide whatever the project required or they will happily accept 3D models done till date.Clear communication with cool head is the key to success of the Project!
