Training from IT or to have an external DPO is key! These skills are very specific and not accessible to everyone, I would call a professionnal to the rescue.

You can't, and this is ok, at least at the initial stage. Just drastic changes challenge each and every team. The longer the team has been working on a different/manual system, the longer it will take for the team to integrate into the new system. It is highly crucial to allow small mishaps and mistakes at the beginning, to create a tolerance credit to ensure that the team feels secure with the new system. Once the team member less pressure for transformation, integrity will find its foundation naturally. Important to note, that the change manager/product owner or whoever has the main responsibility establishes a strong supervision of the actions on the new system and takes notes on any points which might need correction later.
