An outlet that has a specific clientele that purchase non-organic high end dish mostly, will not have a food cost impact because they have one or two dishes that are organic and make of high-quality organic ingredients. In other words, it depends on the sales mix, if this product's sale represents 1% of total food sales, the food cost impact overall will be minimal, but if this particular product is the top-selling product on the menu, that will result in increasing the food cost as we all know, Organic food is more expensive to source.
