As the very term “sustainability” is not legally defined (yet), you need to asses your own understanding of it and compare it with how your competitors are defining it. This is to preserve a very level playing field and avoid misleading and disproportionate claims. For instance, clearing state that you are comparing the same metrics (electricity, land use, water) across the same product categories. If you want to enhance your reputation, think about being certified by a third party to valid your sustainability efforts.

In my experience! Local sourcing and seasonal ingredients, Prioritising local suppliers to reduce transportation emissions and focusing on seasonal ingredients is a great place to start. Reducing food waste is also a crucial factor to consider. Implementing practices that maximize the use of ingredients, such as root to stem cooking, and donating surplus food where possible. I’m also interested in composting systems for waste that can’t be reused. These basic steps can contribute to a more responsible, sustainable food chain that benefits both the environment and my clients pockets.
