Siempre hay que tener planes B y sobretodo margen de maniobra… no es lo mismo “mañana no hay catering” que “se nos ha quemado la cena y todos están sentados”. Obviamente, en el peor escenario posible, abrazar el caos, la verdad por delante y pizzas variadas nunca falla (a no ser que sea una fiesta en la embajada, que entonces las pizzas pueden no ser la mejor opción). Piensa que solo puedes ir a mejor. Si es un evento grande, varios restaurantes diferentes y montar mesas temáticas. Si el evento es pequeño, intentar que algun restaurante cercano sustituya ese catering. A las terribilisimas, barras de pan y medio equipo haciendo bocadillo fríos.

any mess up in the event gets knows to public only when it is loudly talkd about most of the casses only the client & event manager & service provider knows what has gone wrong it is always advisable to keep patience ; enjoy the moment and settle accounts later

Talk to your servers and be very calm about it and bring out different appetizers first and if one tree is overcooked re-cook it and serve it last. Make sure your vendors are fed when the patrons are seated at the same time so the music is not delayed and once your servers are done, make sure you have a family dinner in the kitchen
