(edited)In reality, you will always have a biased AI model because of the biased training data you used for building the model. Training data is always just a snapshot of the real world. What can you do? You must thoroughly explore and understand this bias and use it for setting expectations and limitations of your AI model. Explicitly state the intended use of your model limited by the biased data it was trained on. For example, if you trained your model only on cats and dogs for animal classification, don't expect it to predict giraffes. If you believe that your model can interpolate/extrapolate to giraffes, you have to test your model thoroughly on a test set with giraffes but then your model will be limited to your biases in the test set.
