There is no tradeoff. Food safety cannot be compromised, whilst deadlines too cannot be missed consistently. To ensure this, invest in training staff on food safety, appoint a food safety team and empower them with checklists on GMP, GHP and other PRP's. Have a well defined HACCP plan in place and ensure that the staff has at least a level 2 training for HACCP ( understand HACCP). Have clearly defined critical limits, monitoring procedures and corrective actions. Make sure the documentation and record keeping is robust. Inculcate this as a culture within the staff. Lastly, audit your system at defined intervals to find the gaps and improve upon them.
